Soba Noodle Salad Bowl Recipe
Warmer weather usually means that we are looking to spend less time in the kitchen cooking and more time out enjoying the sunshine. Many of us also gravitate less towards warm, hearty meals and opt for cooler refreshing meal options.
Here’s a great meal prep lunch idea to try out with warmer weather ahead!
This soba noodle salad bowl is a great balanced option that you can make on a Sunday and have on hand for lunches throughout the week. Soba noodles are made from buckwheat, which is a great whole grain swap to help keep you feeling satisfied and energized!
Soba Noodle Salad Bowl Recipe
Yield: 4 servings
Ingredients
250g soba noodles
1 cup red cabbage, thinly sliced
1 cup carrot, thinly sliced into matchsticks
1 cup bell peppers, thinly sliced
2 scallions, chopped
2 sprigs green onions, chopped
1 ½ cups edamame
½ cup peanuts, chopped
Dressing
3 tbsp sesame oil
3 tbsp rice vinegar
3 tbsp soy sauce
1 ½ tbsp honey
2 tsp fresh ginger, grated
Instructions
Cook the soba noodles according to the package instructions. While the soba noodles are cooking, mix together the dressing ingredients.
Once the noodles are cooked, drain and add them to a large bowl with the red cabbage, carrot, bell peppers, scallions, green onions, and edamame. Toss together with the dressing.
For meal prep lunches, separate the salad into 4 containers and add 2 tbsp chopped peanuts to each portion.
